What is Uzbek-Italian cooking, and why does Salute cook this way?

Familiar dishes, Italian technique and Tashkent hospitality: a short guide to how the kitchen at Salute family cafe works.

A long family table at Salute, set for a large party

In short: at Salute we cook dishes everyone knows — pasta, steaks, salads, soups — with Italian technique, and serve them the way guests are welcomed in Tashkent: generously, warmly and around a big table.

Two habits that get along well

Tashkent knows how to host. The table is laid with plenty to spare, the family sits down together, and lunch easily turns into a long conversation. Italy knows something else — how to cook simple things precisely: proper pasta, an honest sauce, good ingredients and nothing extra.

Salute lives where those two habits meet. We don’t try to be a strict Italian restaurant, and we don’t make “Uzbek food with Parmesan”. We take what everyone loves and cook it with care.

What it looks like on the menu

  • Pasta, your way. Penne, spaghetti or fettuccine — you choose the shape. Then the classics: al Pomodoro, Bolognese, Alfredo, salmon in cream sauce and seafood in a bisque sauce.
  • Soups you grew up with. Chicken broth with house noodles sits on the menu next to an Italian minestrone and a pumpkin cream soup.
  • Meat and fish from the grill. Filet mignon with potato balls, medallions with hash browns, bone-in ribeye, trout La Crosta.
  • Uzbek dishes from a Neapolitan oven. Samsa, lula kebab on Neapolitan flatbread, shurpa and slow-cooked beef under a cheese dome — from the Moretti oven on our terrace.

Familiar dishes cooked the Italian way — and served the way guests are welcomed in Tashkent.

Why a family cafe

Because that’s how people eat in Tashkent — together, with the kids, with the grandparents. That’s why we have a separate kids’ menu, a big table for family celebrations, and a bar that serves signature teas, lemonades and milkshakes as well as coffee.

What’s next

The menu keeps growing. We’ve recently added dishes from the Moretti oven — samsa, lula kebab Neapolis, slow-cooked beef under a cheese dome — as well as pizzoni, burgers and sandwiches. Come and see us at Buyuk Ipak Yuli 288. We’re waiting for you every day!
